It takes two simple ingredients to make a delicious strawberry syrup you'd want to add to all your favourite desserts - fresh strawberries and white granulated sugar.

If you want to brighten and preserve the vibrant hue of the strawberry's natural colour, a few drops of fresh lemon juice will prevent it from browning!

Marinated strawberries with sugar are the cooking term that describes the macerating process of turning sweet strawberries into jam-like strawberry sauce.

Use this simple recipe over vanilla ice cream, panna cotta with Chantilly cream, whipped cream or Greek yogurt! Plain yogurt is great too!

What Are Macerated Strawberries?

Macerating fruits means marinating fruit by adding sugar to the berries. The process draws out the sweet natural juices to create a strawberry jam-like consistency! Allow the sugar and the fresh berries to rest at room temperature. Adding a splash of Grand Marnier can make it extra fancy for the holidays.

Natural fruit syrup can be used in various ways. My favourite way is to make a cold glass of Korean Strawberry Milk!

Fresh or Frozen Strawberries?

Either fresh or frozen strawberries will work. During strawberry season, when there is an abundance of ripe strawberries, I love to use those that have been in the fridge just a little too long!

Macerating vs Jamming

The main difference between macerated fruit, fruit jams and compotes is that maceration does not require cooking.

Macerate - soaking fruit in sugar to draw out the fruit juice.

Jam –To make jam, you much have sufficient Pectin. Usually, you will add some pectin powder for jam, such asBernardin Classic Pectin Crystals. The Pectin will thicken when dissolved in a bit of liquid and cooked.

Compote –Does not require adding pectin powder. Compote can be made by cooking in-season berries or fruits with sugar. It is usually less viscous than jam.

Ingredients and Substitutes

Fresh Strawberries -The star of this popular beverage is real strawberries. Always use in-season fresh fruits whenever possible for the best flavour and texture. Look for ripe strawberries that are firm and plump with a ruby-red colour. These are the sweetest and juiciest!

Sugar –A good amount of sugar is required to balance the tartness of the strawberries. Use white granulated sugar, brown sugar, or monk fruit sugar replacement. I've also tried coconut sugar, and it works great! Maple syrup is a great vegan sweetener. Keep in mind; honey is not vegan. Luckily, sugar levels can be adjusted to your personal preference!

Fresh Lemon Juice:Add a little lemon juice to brighten the delicious flavour of fresh strawberries. Lemon juice is also used to preserve the vibrant hue of the strawberry's natural colour. The acid will prevent it from browning!

How to Macerated Strawberries

For best results, follow this easy recipe; you will always nail the perfect dessert strawberries.

Add baking soda to cold water and soak the strawberries in a large bowl for 5 minutes.

It would be even better to cover and shake it a few times.

Rinse and pat dry fresh strawberries with a kitchen paper towel.

Alternatively, soak and wash the fresh strawberries with a fruit and veggie spray like this one.

De-stem the strawberries and remove the core with a strawberry huller or a sharp pairing knife.

If using frozen strawberries, allow time to thaw.

Slice strawberries or cut the strawberries into small pieces by hand or pulse a few times with a food processor. I like these food processor best!

You can also crush them with a masher to your desired size.

I like to keep a majority of the strawberries chunky for several reasons. One, they will cook down and break apart. Two, chunky strawberries give the Korean Strawberry Milk beverage a better mouthfeel. And three, it looks visually more appealing!

Mix strawberries with white sugar and fresh lemon juice in a large bowl. Mix well.

Allow the strawberry mixture to rest at room temperature until the sugar dissolves for approximately half an hour.

During the sugar marinating process, the sugar will draw out the soaking fruits' own juices and turn them into a delicious sweet dessert sauce.

How To Store Homemade Strawberry Syrup

This supreme strawberry syrup can be meal prepped ahead of time. Store the remaining strawberries and syrup in the refrigerator in an airtight glass bottle container for up to 4 days. The flavour intensifies, and the colour deepens the next day. Stir before use.

You can also freeze macerated berries into ice cubes. I like thisice cube tray with binbest! You can use the defrosted strawberries ice cubes in sparkling beverages or the delicious syrup as a base for salad dressings.
