Ingredients

Here is what I used for making this Greek spaghetti recipe. A full list of measurements needed for the pasta dish is featured below in the recipe card.

Spaghetti – You will use spaghetti noodles for this pasta dish. Granted you can change up the type of pasta if you would like. I find it is the perfect flavor pairing with the dressing.

Oil – Olive oil is the traditional oil you will use for this, as olive oil is going to add a small amount of flavor to the dressing but not overpower.

Onion – Red onion that is finely and thinly sliced and diced is what you will use. It is going to truly enhance all the flavors of the dish.

Garlic – Fresh garlic that is minced is best for this recipe. That way it is super fine and adds flavor without overpowering a bite.

Red Wine Vinegar – Red wine vinegar is the perfect flavored vinegar to help add flavor to the dressing with a tart component that will elevate all the flavors.

Seasonings – Fresh basil, ground black pepper, kosher salt, and dried oregano are the herbs and seasonings used for flavoring.

Lemon – Fresh lemon juice is a must as the acidity helps to transform the flavors in this dressing.

Vegetables – Cherry tomatoes, baby spinach leaves, and kalamata olives are used for the mix-in ingredients that are going to add tons of flavor to the salad.

Variations to Recipe

Dressing – If you do not want to make homemade dressing you can buy a Greek dressing that you use to mix in with the pasta and veggies. I find that homemade dressing truly is the stand-out flavor of the pasta dish.

Vegetables – If you want raid your vegetable drawer and add or take away any of the veggies you see in the list. Cucumbers, carrots, snap peas, and more all can be used if you want to add more flavor to the dish.

Pasta – Any type of pasta works for this recipe. If you need gluten-free pasta go ahead and use whatever pasta you typically use. Also, any type of pasta works for this recipe. Bow-tie, shells, and more can be used if you don’t want to use spaghetti noodles.

Vinegar – A white wine vinegar can be used as well in replace of the red wine vinegar. If you don’t have either of those I would use a white distilled or even rice vinegar in replace of it.

Protein – You are welcome to add in protein if you want. Diced grilled chicken, shrimp, pepperoni, salami, chickpeas, pinto beans, etc. Feel free to add any type of protein you would like to make this a heartier dish.

I wanted to share a few tips and tricks to help set you up for success when it comes to making this Greek spaghetti recipe.

  • You can buy a garlic press that works great for mincing the garlic. I find this is one kitchen tool I can’t live without.
  • Cook the pasta until it is al dente. Follow the directions on the back of the package.
  • Fresh vegetables are key as it is going to offer the richest flavor to your dish.
  • Fully whisk up the dressing so all the flavors are evenly stirred together. Then gently toss the dish with the dressing so it fully blends with all the ingredients.
  • Allowing the pasta to set for a bit helps infuse the flavors together even more.
  • Saute the garlic and red onion to help deepen the flavors and take away some of the harshness of the two ingredients.

FAQs

Can I use frozen spinach in replace of fresh spinach in the recipe?

If you want to use frozen just thaw and drain off the spinach and then use around 1 1/2 cups of frozen spinach to replace the fresh spinach. Frozen spinach is soft and it will be a bit softer than wilting fresh, but it does convert well.

What is the best way to reheat leftover Greek spaghetti?

If you have leftover pasta that you want to reheat simply place it on a plate or in a bowl. Then warm it up in the microwave or toss it in a pan on the stovetop. If you heat on the stovetop you can add a tablespoon of water to help ensure the pasta doesn’t dry out too much. Reheat until warmed through.

How long can I store leftover pasta?

Since there is no meat in this recipe you will find the pasta stores for 4-5 days in the fridge. Just toss well before dishing up as the dressing can settle at the bottom of the container. Make sure to store any leftover pasta in an airtight container in the fridge.

Ingredients

  • 1 lb spaghetti
  • 4 tablespoons olive oil divided
  • 1 small red onion finely diced
  • 3 garlic cloves minced
  • Juice of half a lemon
  • 1 tablespoon red wine vinegar
  • 1 tablespoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 cups halved cherry tomatoes
  • 2 cups fresh baby spinach
  • cup pitted kalamata olives sliced
  • 4 oz crumbled feta cheese
  • 4-5 fresh basil leaves thinly sliced
  • Optional* fresh chopped basil or parsley for garnish

Instructions

  • Cook spaghetti according to package directions. Reserve ¼ cup of pasta water and drain the remaining water. Add 1 tablespoon of olive oil to the pasta, toss and set aside.

  • Add 1 tablespoon olive oil to a large skillet over medium high heat. Saute the diced onions until soft.

  • Add garlic to the pan and saute for 1 minute.

  • Add cherry tomatoes to the pan with the remaining olive oil and saute for several minutes, until the tomatoes are softened.

  • Add the baby spinach to the pan and cook until wilted.

  • Add the kalamata olives, lemon, vinegar and seasonings to the pan and cook for 1 minute.

  • Remove from heat and add the cooked spaghetti. Toss to coat in the vegetable mixture.

  • Add the feta and fresh sliced basil and toss one more time to combine.

  • Garnish with additional fresh basil or parsley and serve, enjoy!
