AChocolate Chip Cookie Pizzais an easy alternative to birthday cake for a kids’ birthday party. One bowl, one pan… What’s not to love? And what cookie-loving kid wouldn’t love a homemade chocolate chip cookie the size of a slice of pizza? Top it with ice cream, and you have the perfect dessert to feed a crowd of hungry, cookie-crazy kids.

This chocolate chip cookie pizza is AMAZING! It’s crispy on the outside, and soft and chewy on the inside, just like a chocolate chip cookie should be. It’s quick and easy to make, and because it’s the size of a large pizza, it can be cut into 16 slices, so it’s perfect for potlucks, bake sales, and family get-togethers. Here at our house, however, this huge cookie has become our favourite alternative to a birthday cake.

See, I’ve always put a fair amount of time and effort into making my boys’ birthday cakes, and I’ve come up with some pretty elaborate cakes over the years.

One year however, whenmy oldest was planning his birthday, he asked if I would make him acookie pizza instead of a birthday cake.

I was like, “What?A cookie? Really? You want a chocolate chipcookie instead of one of my cakes???”

Yep. He’d been to a friend’s birthday earlier that month, and they had apparently served a giant cookie pizza (or is it a pizza cookie?) at the party. Matt said it was “the BEST chocolate chip cookie EVER”.

Well, you can imagine it would be, right? I mean, think about it; each kid was handed a chocolate chip cookie equal in size to aslice of pizza.

What’s not to love?

I’m not gonna lie. At first, Ifelt a pang of sadness. My cake-decorating days were coming to an end.

But then I thought about how much faster andeasier it would be to make one giant birthdaycookie than it would be to bake and decorate a birthday cake. So I called up the mom of my son’s friend, and I asked her how to make this “cookie pizza thing” that my son was raving about.

And I made it.

In like, 10 minutes.

And in one bowl.

It was. To die for.

Needless to say, when my younger son asked me to bake a cookie pizza for his birthday several months later, I was like “YESSSS!” Off the hook for making a cake again!

Seriously. You don’t even need birthday candles when you’re serving a cookie!

Ingredients & Equipment

  • butter, softened
  • white sugar
  • brown sugar
  • vanilla
  • eggs
  • all purpose flour
  • salt
  • baking soda
  • chocolate chips

Equipment: electric beaters, pizza pan or pizza stone (I use a 14.5 inch pizza stone most times).

How to Make Your Cookie Pizza:

Preheat your oven to 375ºF

In large bowl, with your electric beaters, cream the butter, sugars and vanilla until soft and fluffy.

Add your eggs,and beat well.

Gradually add the flour, salt, and baking soda, and beat until well blended.

Stir in your chocolate chips. Mmmmm. Chocolate chips.

Now, you’re going to spread your cookie dough out on a 12-15 inch pizza stone or a greased pizza pan.

*Be sure to leave an inch or so of space around the edge of the pan as the dough will spread when the cookie is baking. If your finished cookie happens to hang over the edge of your pan a little, just go around the outside of your stone or pan with a sharp knife to clean up the edge of your cookie.

Bake at 375ºF for 20-25 mins.

Use apizza cutter, or even better, a pizza rocker (I have one, and I love it!) to cut your chocolate chip cookie pizza into 16slices. Serve sightly warmwith a scoop of ice cream.
