I remember the first time I found out how manyrice varietiesthere are; I was blown away. Every continent has several types of rice, and, of course, they all have their favorite recipes. Yum! So you know how easy it was to put together a loooong list of my favorites.

FAQs

Should I rinse my rice, or not?

That is an often asked question. And, honestly, the answer depends on the recipe and your preferences. In the States, they recommend not rinsing rice because they’ve enriched it with vitamins. Sorry, but if you depend on those vitamins for proper nutrition, you may need to take a good look at your diet. I like to rinse my rice and more than enough water. As soon as it’s almost done, I drain it, and the residual water is just the right amount to steam it to perfection.

What’s the difference between long-grain, medium-grain, and short-grain rice?

Long-grain rice is longer and thinner than the other two types of rice. They don’t stick together as easily, making them ideal for pilafs and Southern comfort food rice recipes.
Medium- and short-grain rice are plumper, stick together a little easier, and have a creamier texture. That makes them a better choice for Asian food and risotto.

How do I reheat leftover rice?

Add two tablespoons of liquid to each cup of leftover rice, then heat covered on the stovetop, oven, or microwave. It takes about five or six minutes in the oven or stovetop.

What’s the difference between white and brown rice?

Rice, like wheat, comes with a hull. The hull is removed, and you have whole-grain brown rice. It has healthy fiber and nutrition. To get white rice, they run it through a machine that polishes the bran and germ off. It’s not quite as nutritious as brown rice, but it cooks faster and has a more neutral flavor.

Baked Crispy Chicken Legs

A few simple tricks make these chicken legs crispy on the outside, tender and juicy on the inside, and ridiculously flavorful. It’s quick, easy, paleo, gluten-free, and only requires 10 mins prep.

Ingredients

  • 3-3 ½ pounds chicken legs
  • 1 tablespoon dried Italian herbs
  • teaspoons salt
  • tablespoons onion powder
  • tablespoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon white pepper
  • ½ teaspoon cayenne pepper
  • 1 teaspoon bouillon powder (you may replace with salt)

Instructions

  • Wash chicken legs and place them on a cookie sheet in a single layer, then let them sit in the fridge for a minimum of 3 hours or preferably overnight. Do not cover them; let the air dry. You can omit this part and proceed with the spices.

  • When ready to bake, preheat oven to 425°F.

  • Place the chicken in a large bowl with all the spices, then drizzle with oil.

  • Line a baking pan with foil; top with a wire rack. Arrange chicken legs in a single layer. While the chicken legs are baking, the oil will slowly drip to the bottom of the baking pan.

  • Bake chicken legs until cooked through, and skin is crispy, 45-50 minutes. Rotate chicken legs halfway through—roughly 20 minutes.

  • Remove and serve with your favorite chicken sauce or African pepper sauce.
